Job Description

Sushi Chef - Full Time/Part Time

We are Japanese ramen restaurant that also serves sushi. Our sushi chef is retiring and we are looking for someone to takeover his responsibilities, which include:

Fish prep and butchery (filleting, sashimi/nigiri cuts, portioning)
(Sushi Rice) preparation for nigiri and basic maki
Responsible for inventory, ordering, and station organization
Managing sushi dinner service alone
Maintain cleanliness and food safety standards (including temperature control)

* Requirements *

2+ year experience in a sushi/Japanese kitchen (sushi bar preferred)
Strong knife skills and basic fish handling
Detail-oriented, clean, reliable, and punctual
Good communication
Authorized to work in the U.S.
Whole fish breakdown experience
Food Handler Card / ServSafe (can obtain after hire if needed)
