Prep &/or Line Cooks

AMC Foods is back for the 2026 South Florida Fair! We are looking for line & prep cooks to operate our Birria &/or Mac & Cheese Truck, and keep the kitchen up to par with prep.
This is a 17 day show, prep will start Thursday (day before opening).

Fair Dates: Jan 16-Feb 1

REQUIREMENTS:
Prep Cook:
Work off daily par list making rice, sauces, salsa verde, pastor marinade, Birria marinade, ect (recipes provided). Cutting veggies and meats.

Line Cook:
Birria truck - cook to order tacos (carne asada, pastor, Birria, chicken), quesadillas, nachos, rice bowls, burritos, etc. When it’s busy, this is a 2 man operation, with 1 person cooking the orders, the 2nd plating and finishing.
Mac & Cheese truck - cook to order Mac & cheese bowls (steak & bacon, lobster, seafood, buffalo chicken, bacon & ranch, customer’s custom bowls, etc). Currently have a full time Mac cook but can always use another cook to help on the line when it gets busy.

COMPENSATION: $17-$22/hr based on experience.
