Position Overview

We are seeking a skilled kitchen manager to join our culinary team. The ideal candidate will support daily kitchen operations, maintain high food-quality standards, and expertly break down, portion, and prepare a variety of meats. This role is hands-on and requires leadership, precision, and a passion for excellent cuisine as well cooking on the line daily.

Key Responsibilities

Assist the Executive Chef with menu planning, food preparation, and kitchen leadership.
Perform advanced meat-cutting tasks including breaking down cuts, portioning, trimming, and preparing meats for service.
Oversee line cooks and prep staff to ensure consistency, efficiency, and adherence to recipes.
Maintain proper food safety and sanitation standards, including storage, labeling, and rotation of products.
Monitor inventory levels and communicate ordering needs, especially for meat and protein items.
Ensure all dishes leaving the kitchen meet presentation and quality standards.
Train staff in butchery techniques, knife skills, and safe handling of raw meats.
Assist in enforcing kitchen policies, scheduling, and workflow.
Contribute to a positive, collaborative, and fast-paced kitchen environment.
Qualifications

2+ years of experience in a similar role
Proven meat-cutting or butchery experience, preferably in a professional kitchen or butcher shop.
Strong understanding of food safety regulations and kitchen sanitation procedures.
Excellent knife skills and knowledge of various cuts of beef and chicken
Ability to lead and motivate a team under pressure.
Strong organizational, time-management, and communication skills.
Physical Requirements

Ability to stand for extended periods.
Ability to lift up to 50 lbs.
Comfortable working with sharp tools, heavy equipment, and raw proteins.
