We are looking for a reliable and detail-oriented Poke Maker / Fish Cutter to join our team.
This position is responsible for cutting sashimi-grade fish, preparing ingredients, assembling poke bowls, and maintaining kitchen cleanliness and food safety standards.

🔪 Key Responsibilities
🐟 Fish Cutting & Prep

Cut and portion sashimi-grade tuna and salmon

Follow proper trimming and waste control procedures

Maintain correct portion sizes

Ensure fish freshness and quality

🥑 Ingredient Preparation

Prep vegetables (avocado, cucumber, green onion, etc.)

Prepare sauces and toppings

Follow daily prep list

🥗 Poke Bowl Assembly

Build bowls according to recipe standards

Maintain presentation quality

Work efficiently during rush hours

🧼 Sanitation & Organization

Maintain clean and organized workstation

Follow food safety guidelines (FIFO system)

Keep walk-in and prep area organized

Assist with end-of-day cleaning

✅ Requirements

Experience cutting raw fish preferred

Kitchen experience required (poke or sushi experience a plus)

Knowledge of food safety and sanitation

Able to work in a fast-paced environment

Reliable, punctual, team-oriented

Able to lift 40 lbs
