Job Description
Chez Noir is a Michelin-starred, hyper-seasonal restaurant on California’s Central Coast. Our food is grounded in California product, informed by French and Mediterranean technique, and driven by daily collaboration with farmers, fishermen, and foragers around Monterey Bay.
We’re entering a real rebuilding phase and are hiring a Chef de Cuisine to work directly with the chef-owner. This is a leadership role for someone who wants responsibility, trust, and accountability — not a title and not a holding pattern.
This kitchen values precision, calm, and follow-through. We take the craft seriously, but we don’t run a chef temple.
THE ROLE
Lead daily service and prep
Train, develop, and hold standards with cooks
Collaborate closely on frequently changing menus
Own ordering, inventory, labor, and daily numbers
Stay hands-on and present on the line
Be a stabilizing force in a demanding kitchen
THE PERSON
Proven senior sous chef or current CDC
Comfortable leading people and managing systems
Direct, calm, accountable under pressure
Cares equally about food and operations
Can confront issues early and clearly
